One Pan Roasted Shrimp + Asparagus [and a giveaway from Tessemae's!]

If you've been doing Whole30, you've probably been spending a lot of time cooking. And if you've been cooking a lot, you (or some lucky person in your household) has likely been cleaning the kitchen a lot. As much as I love cooking, the cleanup part can be overwhelming, and some recipes require the use of so...many...dishes. To keep the cooking and cleanup time to a minimum, I like to take a couple shortcuts. 

First shortcut? One pan meals. This Roasted Shrimp + Asparagus can all get tossed together on one baking sheet, thrown in the oven for a few minutes and voila...dinner is ready. Of course, if you're wanting to add a side like cauliflower rice, wild rice, couscous or quinoa, you'll have to use another pot or pan...but even then, two dishes ain't bad. 

My other shortcut is to use ready-made condiments, and Tessemae's dressings, marinades and dips are my current fave. The recipe below uses Balsamic dressing, which makes the prep time super quick. As with all Tessemae's products, there's nothing fake added. They also have something for nearly every special diet (Whole30, gluten-free, vegan, dairy-free, kosher, etc.) and they've recently come out with an organic line.

(Let me digress for a second and state a brief disclaimer: real, natural food doesn't taste like artificial, preservative-laden food. For example, if you are expecting to buy Tessemae's Ranch and have it taste exactly like a certain other famous brand of ranch dressing, that won't happen. I've enjoyed everything I've tried so far (especially the ranch), but keep in mind that real ingredients taste like real ingredients....and Tessemae's excels at using real ingredients to make great-tasting condiments.)

One Pan Roasted Shrimp + Asparagus
Yields 2-4 servings*

1 pound fresh, thin asparagus**
1 pound raw jumbo shrimp, peeled and deveined
1 lemon, halved
3 Tablespoons balsamic dressing (such as Tessemae's Balsamic)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Preheat over to 400 degrees. Line a rimmed baking sheet with aluminum foil. Break off the tough ends of the asparagus. Lay the asparagus and shrimp out in one layer on the prepared baking sheet. 

Slice one half of the lemon into 1/4 inch slices. Squeeze out the lemon juice from the slices over the shrimp and asparagus, then add the squeezed slices to the baking sheet. Drizzle on the balsamic dressing, and add the salt and pepper. Toss everything together until shrimp and asparagus are evenly coated.

Bake for 8-10 minutes, or until shrimp are pink and cooked through. Transfer to a serving dish or plates. Zest the remaining half lemon. Sprinkle shrimp and asparagus with lemon zest, salt and pepper to taste. Enjoy!

*Serve this dish with roasted cauliflower, potatoes or another side to stretch the number of servings. 

**If the asparagus spears are thick, roast them for 5-10 minutes before adding the shrimp. Then add the shrimp to the pan, toss everything together, and roast another 8-10 minutes.
